Today we're taking a trip back to last year. Maybe next year I'll get around to posting the cooking pictures I took today. But for the purposes of temporal shenanigans, hereafter the past shall be referred to in the present tense.

Today we prep and then make Eggplant Rollatini.

Acquire eggplant, skin it, and slice it ahead of time.
Or do it right before you need to make them. I'm not you're mom; I'm drunk.
Your local volunteer firehouse probably has a deli slicer. Use that because it's better than a mandolin and waaay better than a knife.
