Today we prep and then make Eggplant Rollatini.
Acquire eggplant, skin it, and slice it ahead of time. Or do it right before you need to make them. I'm not you're mom; I'm drunk. Your local volunteer firehouse probably has a deli slicer. Use that because it's better than a mandolin and waaay better than a knife.
